Family bakery in Humboldt Park making small-batch cookies, brownies, and pies from scratch — neighborhood retail and wholesale. Not Just Cookies is a small family bakery run by siblings Johnathon and Joy Bush. Johnathon started the business as a teenager in Ohio and later grew it in Chicago. After a South Loop storefront (2017–2020) and years of ghost kitchens plus a Garfield Park wholesale location, the siblings opened a retail bakery at 1340 N. Homan Ave. in Humboldt Park in February 2025, supported in part by a city Good Food Grant. The shop continues wholesale while offering walk-in retail. Cookies are made from scratch in small batches, hand-scooped and packed; the company states non-vegan items use real butter and real vanilla, natural / non-GMO ingredients, and locally sourced wholesome ingredients. Popular varieties cited in press include butter, oatmeal chocolate chip, turtle, and peanut butter; brownies and pies are also offered. The bakery has hired young people from South and West Side neighborhoods and donated leftover baked goods to local churches and people experiencing homelessness (per owners in Block Club coverage).
